Encore une délicieuse tarte de saison. La noisette présente dans la pâte et sur les fruits apporte une petite touche d'originalité.
Another delicious seasonal dessert. Hint of originality comes from hazelnut in the crust and on top of the fruits.
Tarte aux prunes et aux noisettes
Pâte (inspirée de celle de Pascale) :
125 g de farine T55
50 g de farine de petit épeautre
25 g de farine de noisette
2 cuil. à soupe de sucre en poudre
75 g de beurre
3 Petit-Suisse (180 g)
Garniture :
1 cuil. à soupe de maïzena
1 cuil. à soupe de sucre en poudre
Prunes (750 g à 1 kg)
2 cuil. à soupe de cassonade
40 g de noisettes hachées grossièrement
Préparer la pâte en mélangeant les farines et le sucre. Incorporer le beurre en petits morceaux, du bout des doigts. Ajouter ensuite les Petit-Suisse, travailler à la fourchette puis pétrir à la main pour former une boule. Filmer et laisser reposer au frais au moins 30 mn
Au bout de ce temps, préchauffer le four à 180 °C. Étaler la pâte finement, en chemiser le moule et saupoudrer dessus un mélange sucre + maïzena qui absorbera le jus des fruits. Couper les prunes en deux, les dénoyauter et les disposer joliment sur votre fond de tarte. Saupoudrer de cassonade et de noisettes concassées, puis cuire environ 40 mn. Déguster tiède ou à température ambiante.
Plum and hazelnut tart
Crust (inspired by Pascale's):
125g T55 flour
50g Einkorn flour
25g hazelnut flour
2 tblsp sugar
75g butter
3 “Petit-Suisse”, or about 180g soft white cheese
Filling:
1 tblps sugar + 1 tblsp corn starch, mixed
750g to 1 kg plums
2 tblsp brown sugar
40g roughly chopped hazelnuts
Prepare the crust: miw flours and sugar. Add diced butter and work the ingredients with your fingertips to get a crumbly mixture. Add the “Petit-Suisse” or soft white cheese, first work with a fork, then knead rapidly with your hand to form a homogenous dough. Wrap in plastic film and store in the fridge for at least 30min.
Preheat the oven to 180°C (350°F). Thinly roll out the dough and line your pie dish. Sprinkle the corn starch and sugar mixture on the bottom; it will absorb the juice from the fruits. Cut plums in halves and remove the stone. Nicely arrange the plum halves on the dough, sprinkle the top with brown sugar and chopped hazelnut, and bake for about 40min. Best eaten lukewarm or at room temperature.
