Chardin de 1764 (musée des Beaux-arts de Boston), il fallait inventer une recette, entrée, plat ou dessert, au choix ! On avait le droit d'ajouter quelques ingrédients, quand même...
This recipe of pear, grapes and chestnut clafoutis is my participation in the cooking contest organized by Hélène. The principle was to take the ingredients pictured by J.-B.-S. Chardin in this still-life dated 1764 (Boston museum of fine arts), and invent a recipe, starter, main dish or dessert. A few more ingredients could be added though.
Alors, qu'est-ce qu'on a ? Du thé, des châtaignes, du raisin et des poires.
So what do we have here? Tea, chestnuts, grapes and pears.

All right, then! Here's my recipe!
Clafoutis poire, raisin et châtaigne
Pour 4 personnes :
2 poires
1 cuil. à soupe de thé noir*
60 g de sucre en poudre (20 g + 40 g)
2 œufs
20 g de farine de châtaigne
90 ml de lait
Une 20e de gros grains de raisin
1 poignée de châtaigne
Inciser les châtaignes et les faire griller à sec dans une poêle.
Faire bouillir ½ l d’eau et y faire infuser le thé dans un filtre pendant 5 mn. Retirer le thé, ajouter 20 g de sucre en poudre et porter à nouveau à ébullition. Éplucher les poires, retirer le cœur et couper les fruits en quartier, les plonger dans le thé et les faire pocher jusqu’à ce qu’ils soient tendres.
Préchauffer le four à 180 °C. Dans un saladier, battre les œufs en omelette, ajouter le sucre (40 g) et mélanger. Ajouter enfin la farine tamisée et bien remuer.
Laver les raisins, couper les grains en 2 et retirer les pépins. Dans des plats individuels, disposer les quartiers de poires cuits et coupés en dés et les demi-grains de raisin (face coupée vers le bas), verser la préparation liquide et déposer une châtaigne épluchée sur le dessus. Faire cuire 30 mn, puis laisser refroidir avant de déguster !
*j’ai utilisé du thé noir parfumé à l’érable, mais vous pouvez utiliser n’importe quel thé noir un peu corsé, parfumé ou non.
Pear, grape and chestnut clafoutis
Serves 4:
2 pears
1 tblsp black tea*
60g sugar (20g+40g)
2 eggs
20g chestnut flour
90ml milk
About 20 big grapes
A handful chestnut
Make an incision in the chestnuts and dry-roast them in a pan.
Bring ½ liter water to the boil and infuse the tea (put in a filter) for 5mins. Remove the tea filter, add 20g sugar and bring to the boil once again. Peel and core the pears, cut them in 4 and poach them in the tea until tender.
Preheat the oven to 180°C (350°F). In a bowl, beat the eggs, and stir in the sugar (40g). Add the flour and stir well.
Wash the grapes, cut them in half and remove the seeds. Place the grape halves (cut side facing down) and the pears cut in dices in individual dishes, pour the liquid mixture over the fruits and place a peeled whole chestnut on top. Bake for 30min. Cool before serving.
*I used maple flavor black tea to poach the pears, but you can use any other strong black tea, flavored or not.
