Un bon petit plat de saison pour changer un peu du traditionnel parmentier à la viande...
A seasonal and comforting dish, and a change from the traditional meat sheperd's pie...
Parmentier de saumon au poireau
Pour 4-5 personnes :
1 kg de pommes de terre
10 cl de crème fraîche
20 cl de lait tiède environ
500 g de saumon frais
Huile d’olive
2 poireaux
1 petite carotte
1 oignon moyen
Sel, poivre, muscade
Un peu de comté râpé (facultatif)
Peler les pommes de terre, les faire cuire 20 mn à l’eau bouillante salée puis préparer une purée en incorporant la crème fraîche et le lait progressivement, jusqu’à obtenir la texture désirée. Poivrer et muscader, saler à nouveau si besoin.
Faire cuire le saumon au court-bouillon, puis effeuiller la chair en retirant les arêtes.
Dans une poêle, faire chauffer l’huile d’olive et faire revenir l’oignon émincé, puis ajouter la carotte pelée et coupée en tout petits dés, puis les poireaux lavés et coupés en lamelle. Saler et poivrer. Faire cuire l’ensemble jusqu’à ce que les légumes soient tendres, puis ajouter le saumon et mélanger.
Préchauffer le four à 180 °C. Beurrer un plat à gratin, disposer au fond l’ensemble légumes + saumon, puis recouvrir avec la purée. Disposer éventuellement un peu de comté râpé sur le dessus et enfourner pour 30 mn, jusqu’à ce que le dessus soit doré. Servir bien chaud !
Salmon and leek sheperd’s pie
Serves 4-5:
1kg potatoes
10cl heavy cream
20cl (about) warm milk
500g fresh salmon
Olive oil
2 leeks
1 small carrot
1 medium size onion
Salt, pepper, ground nutmeg
A little grated Comté cheese (optional)
Peel the potatoes and cook them in salted boiling water for about 20mins, until tender. Mash them, stir in the cream and gradually add lukewarm milk until you get the proper texture. Season with pepper and nutmeg, add more salt if necessary.
Cook the fish in a court-bouillon, then flake the flesh and remove the bones.
In a pan, heat some olive oil, and cook the minced onion until golden. Add the carrot peeled and cut in very small dices and the leeks, rinsed and sliced. Season with salt and pepper. Cook until the vegetables are tender, then mix in the salmon.
Preheat the oven to 180°C (350°F). Lightly grease a large gratin dish, place the salmon and vegetables mixture in the bottom, and spread the mashed potatoes over it. You may sprinkle a little grated cheese on top if you wish. Bake for about 30mins or until the surface is slightly golden. Eat hot!
