Qui dit Pâques dit chocolat, non ? Alors un déjeuner de Pâques en famille sans un gros gâteau au chocolat, moi je dis que ça n'existe pas ! Cette recette fait la part tellement belle au chocolat que l'on est plus proche finalement d'une texture de ganache ou de truffe. Slurrp !
Easter means chocolate, right? Could you ever fancy your Easter family lunch without a huge and yummy chocolate cake? Nope. There is some much chocolate in the filling that it looks and tastes more like a "ganache" or some kind of "truffe".
Truffé au chocolat façon cheesecake
Pour 8 personnes :
200 g de spéculoos
90 g de beurre
300 g de chocolat noir
300 g de Philadelphia
200 g de fromage blanc
100 g de sucre en poudre
2 œufs
Réduire les biscuits en poudre. Faire fondre le beurre, puis le mélanger aux biscuits et bien remuer pour former une pâte. En tapisser le fond et les côtés d’un moule rond à bord amovible de 20 cm de diamètre (éventuellement chemisé de papier sulfurisé). Bien tasser avec le dos d’une cuillère, puis mettre au frais 30 mn à 1 h.
Préchauffer le four à 180 °C. Faire fondre le chocolat au bain marie ou au micro-ondes. Dans un saladier, battre la ricotta et le fromage blanc, puis ajouter le sucre, tout en continuant de battre pour obtenir une texture lisse. Ajouter les œufs, un par un, puis le chocolat. Bien mélanger. Verser le mélange sur le socle de biscuit, puis mettre au four pour 50 mn. Au bout de ce temps, les côtés doivent être cuits, mais le centre encore tremblotant. Éteindre le four, mais laisser le gâteau refroidir à l’intérieur (pour éviter les craquelures). Ensuite placer le gâteau au frais plusieurs heures.
Chocolate « truffe » cheesecake
Serves 8:
200g speculoos biscuits
90g butter
300g dark chocolate
300g Philadelphia
200g fromage frais (soft white cheese)
100g caster sugar
2 eggs.
Ground the biscuits in a food processor. Melt butter in a pan and pour over the biscuits. Mix well. Press the mixture evenly with the back of a spoon in a 20cm sprinform tin (you can line it with parchment paper) over the bottom and up the side. Chill for 30 to 60mn, until firm.
Preheat the oven to 180)c (350°F). Melt the chocolate in a bain-marie or in the microwave. In a bowl whisk the ricotta and soft cheese until creamy, add the sugar. Beat until smooth. Add the eggs one by one, beating well after each addition. Then stir in chocolate, and mix well. Pour the mixture over the biscuit base. Bake for 50mns, the side should be set but the center should remain soft. Turn off the oven and let the cake in the oven to cool down until completely cool. This will prevent the surface from cracking. Refrigerate several hours.
