Nothing better than a nice batch of yummy scones to start your day!
Banana, ricotta and raisins scones
Makes 12 scones:
100g ricotta
1 egg
1 ripe banana
275g all-purpose flour
75g small old-fashioned oatmeal
40g brown sugar
2 tsp baking powder
¼ tsp baking soda
60g cold butter
75g raisins
Milk and rapadura sugar for the top
Preheat the oven to 210°C (425°F)
In a bowl, whisk together the ricotta, beaten egg and mashed banana. In a larger bowl, mix the flour, oatmeal, sugar, baking powder and baking soda. Cut in the butter and fold it in with your finger to get a crumbly dough. Add the raisins and the liquid and work the dough with a wooden spoon to combine all ingredients. Then knead the dough, quickly and not long, just enough to get a homogenous mixture. Add some flour, should the dough be a little sticky.
Lightly four a surface and divide the dough in two parts. With your hands, flatten the two rolls to 1 inch thick and in each one cut 6 triangular scones. Brush a little milk on each scone and sprinkle with rapadura sugar. Bake for 12-15mn, or until golden. Eat warm with butter and/or jam. You can also freeze the scones and serve them after 10mn reheating in the oven.
Bon appétit !
