J'en avais déjà fait à la pomme de terre, au potiron, mais pas encore à la patate douce, il fallait donc que j'essaye très vite ! Verdict, c'est délicieux ! Je les ai accompagnés d'une béchamel au parmesan. Je ne sais pas comment vous faites votre béchamel, mais personellement j'utilise une recette donnée il y a plus de 30 ans par Michel Oliver quand il officiait comme cuisinier à la télé (là je vous parle d'un temps que les moins de vingt trente ans ne peuvent pas connaître !). Son truc : on met tous les ingrédients dans la casserole et on cuit en remuant. Résultat : génial, béchamel inratable et jamais un grumeau ! Alors je la partage avec vous !
Erin proposed recently on her blog a recipe involving sweet potato gnocchi! Hey, that was new to me, I had already made some with potatoes, or pumpkin, but never with sweet potato. I could not but try this recipe very quickly and the result is really delicious. I served the gnocchi with a parmesan béchamel. What is your own way of preparing a béchamel, btw? Mine is a tip given by the French cook Michel Oliver, who used to have a cooking program on the French TV some 30 years ago (so long!): all ingredients are put in the saucepan at the same time, you just whisk and cook until it thickens... It never fails and you never, ever get lumps. Give it a try!
Gnocchi de patate douce et béchamel au parmesan
Pour 3 personnes :
Les gnocchi :
1 patate douce de taille moyenne
De la farine complète, le même volume que la purée de patate douce obtenue
Sel, poivre, muscade
La béchamel :
150 ml de lait
30 g de beurre
15 g de farine tamisée
Sel, poivre, muscade
Parmesan râpé
Faire cuire la patate douce au four préchauffé à 210 °C, dans sa peau percée de quelques coups de fourchette, pendant 30 à 40 mn. Récupérer ensuite la chair de la patate, l’écraser en purée avec une fourchette dans un saladier. Saler, poivrer et muscader, puis ajouter la farine petit à petit en mélangeant jusqu’à obtenir une pâte ferme et pas trop collante. Il faut à peu près le même volume de farine que de purée.
Prélever les morceaux de pâte et les rouler en boudin que l’on coupe ensuite en tronçon. Former des boules avec les mains puis les aplatir légèrement avec une fourchette en faisant une petite marque.
Porter une grande casserole d’eau à frémissement, et plonger les gnocchi dedans par petites quantités. Quand ils sont cuits (5 mn) ils remontent à la surface. Les sortir et les laisser s’égoutter sur une grille.
Préparer la béchamel : dans une casserole verser le lait froid, ajouter la farine tamisée, le beurre en morceaux, le sel, le poivre et la muscade, et porter à ébullition sans cesser de remuer avec un fouet, jusqu’à épaississement. Hors du feu ajouter le fromage.
Disposer les gnocchi dans un plat, verser la béchamel et saupoudrer de parmesan. Faire gratiner à four chaud.

Sweet potato and parmesan béchamel gnocchi
Serves 3:
The gnocchi:
1 medium sweet potato
Whole wheat flour, about the same volume as the sweet potato puree
Salt, pepper, ground nutmeg
The béchamel:
150ml milk
30g butter
15g flour, sifted
Salt, black pepper, ground nutmeg
Grated parmesan
Preheat the oven to 210°C (425°F). Pierce the sweet potato several times with a fork, put it in a tin and bake it for 30-40mins. Once baked, open it in halves and scoop out the flesh with a spoon. Put the flesh in a bowl and puree it with a fork. Add salt, pepper and ground nutmeg, and gradually stir in the flour, until you get a firm, yet not too sticky dough. Divide the dough in several parts and roll them with your hands on a floured surface to form sausage-like rolls. Cut them in bits, roll them again into ball shapes and press the surface with a fork.
Bring a large saucepan of water to simmer and drop the gnocchi in water, not all at a time. Let cook for about 5mins, until the gnocchi are cooked and float on the surface Remove them and place on a rack to let them drain.
Prepare the béchamel: in a saucepan put the cold milk, sifted flour, cubes of butter, salt, pepper and nutmeg and bring gently to a boil whisking all the time, until the béchamel thickens. Remove from fire and stir in grated parmesan.
Place the gnocchi in a pie dish, spread the béchamel onto them and sprinkle some parmesan on top. Bake in the oven until the surface is golden and the cheese has melted.
